The dawning of the year-end brings a longing sense of nostalgia, and closeness, that only the magic of the season sheds. Though the pandemic seemingly separates us from our loved ones, it has undoubtedly made coming together much more precious through a yearning hope. Festive Ardour – Magic of Season by 1855 F&B concepts makes the festive season unforgettable with intimate dinners, luxury brunches, family-friendly feasts, and gourmet gifts for all.
Available over the weekends of Christmas and New Year’s Day, 24 to 26 December and 31 December 2021 to 2 January 2022, WAKANUI’s festive menu is an ode to the bounty of land and sea, featuring the restaurant’s better known New Zealand steak and lamb.
The 5-course festive menu (S$158++) starts with an amuse-bouche of Duck and Passion Fruit Arancini accented with the tang of sheep cheese, and the aromatic trace of black winter truffles.
Deep dive into the ocean for starters of Pan-seared Scallop with rice milk herb oil and a variety of greens in contrasting textures. Next comes a heart (and tummy) warming Crab Chowder with uni buttered toasts, and daikon cress, which is then followed by Grilled Golden Eye Snapper with lily root and saffron puree.
The star of the show comes in the form of 21 Days Dry Aged Ocean Beef Ribeye, and WAKANUI Spring Lamb Rack, that is grilled over binchotan to the perfect doneness of one’s choice – a sight that never fails to mesmerize even the most discerning steak lovers.
Dessert of Yuzu & Orange Sorbet is reminiscent of little Christmas tree ornaments. The yuzu originates from the island of Shikoku, Japan, and unlike other varietals, possesses a slight minerally taste which is influenced by the surrounding waters.

From dinner to after, and the morning after, Executive Chef Lee Boon Seng from The Spot flexes his culinary prowess with an extensive 8-course Eve Dinner (S$138++) on 24 and 31 December, and a 7- course Festive Brunch (S$110++) available on 25 December 2021 and 1 January 2022.
Known for his flair for European techniques, chef Lee starts eve dinners with Cheese bread and paprika salt, and Snacks of freshly shucked oysters with finger lime and gazpacho consommé; king crab tart with dashi vinegar; and foie gras terrine with tamarind jelly and coffee.
His love for Southeast Asian ingredients is showcased through a visually eclectic way with appetizers such as Lime Coconut Cured Kingfish with kaffir lime emulsion; Seared Jeju Abalone with fermented cabbage barley; and Spiced Duck Breast on turmeric corn and curried carrot.
Mains come as a choice between Roasted Fjord Trout with Jerusalem artichoke, trumpet mushrooms, cured egg yolk, in a roasted bone sauce, or Black Garlic Lamb Loin with a spiced red cabbage puree, and soy mint jus.
End the meal with a duo of desserts like Spiced Orange Granita with mulled wine jelly, and Gingerbread & Butter Pudding with spiced poached pear, Irish cream ice cream, topped with Bourbon caramel.
For brunch lovers, the festive sharing menu starts with small plates of freshly shucked pacific oysters; niçoise salad; sauteed French cockles with sourdough bread; Foie Gras de Canard with black vinegar gel; and Scrambled Eggs & Sea Urchin in lobster bisque.
Be spoiled for choice with a selection of mains like Coffee Pork Belly with ham foam; Pan-fried Fjord Trout with soy bone marrow; Grilled Spring Chicken; Roasted Beef Ribeye with burnt sunchoke puree; or Spinach Gnocchi with roasted fig and blue cheese.
For dessert, a platter of four tasting sweets will enliven the meal. Dig into treats like peach melba log cake, spiced pumpkin pie, tropical fruit truffle and pistachio & apricot cream puff.

No travel lanes to Latin America just yet, but TONITO’s Christmas & New Year Set Menu (S$88++ for 2; S$168++ for 4), available from 24 December 2021 to 2 January 2022, makes for a tantalizing trip around popular Latin American countries.
The start of the feast features Jamon Iberico, a cured Spanish black pork appetizer served with grated tomato, topped on a crispy baguette. Though not a Latin American country, Spain has brought their sensibilities across the seas and has synthesized them into localized culture and cuisine.
Not only known for being the largest country in South America, Brazil is also known for its extravagant Carnaval do Brasil, and one of the street foods consumed during these festivals is Coxinhas De Cerdo, a Brazilian style pork-filled fritter with cheddar cheese and a spicy kick from Habanero Aioli.
At the Northern lands of Latin America lies Mexico, and one of the commonly savoured street foods there is tacos. TONITO’s Taco de Camaron is a playful rendition containing crispy fried prawns, guacamole, smoked red chilli aioli, and sweet pops of pomegranate.
Mains come in the form of a classic Peruvian dish made with aji chili peppers and cream sauce. Aji de Gallina is a chicken stew – a hearty, soul hugging dish served with garlic rice.
End the trip with a refreshing dessert from Cuba – Pina Asada – of grilled pineapple and vanilla ice cream, spiked with orange liquor. The party does not end until tipples are served. Pie de Manzana (S$18++ for 2, S$35 for 4) is an apple infused rum cocktail topped with sparkling wine, and bears the sweet scent of vanilla.

Catch the travel bug whilst en route to Jewel Changi Airport this festive season. From 1 December 2021 to 1 January 2022, Perch dishes out an Asian-European Festive Feast (S$128++ for 2) that will satiate any meat-hankering desires.
Overlooking the iconic Rain Vortex, dig into a family-style spread starting with Blue Mussel Chawanmushi with ikura shoyu, and a hearty starter of Red Skin Potato Salad tossed with smoked bacon and a pickled yellow mustard dressing.
