World-renowned Greek restaurant, estiatorio Milos, has officially opened its first Asian location at Marina Bay Sands, Singapore, on 25 July 2024. Celebrated for its exquisite seafood offerings and authentic Greek culinary experiences, estiatorio Milos brings a taste of Greece to the heart of the city. This new establishment marks the restaurant’s 10th international location, joining its prestigious counterparts in cities like Montreal, New York, London, and Los Cabos.
Founded by chef and restaurateur Costas Spiliadis, Milos at Marina Bay Sands promises an authentic and sophisticated dining experience. The restaurant is deeply rooted in the concept of philoxenia – the sacred art of making a stranger feel at home – and is dedicated to using quality ingredients combined with simple yet masterful culinary techniques.
At the heart of the Milos dining experience is its spectacular fish market, showcasing over 15 varieties of wild-caught fish flown in daily from Greece and the Mediterranean. Guests can select their choice from a variety of fish, including cherna (grouper), fagri (red sea bream), lavraki (seabass), and alfonsino (the emperor). These are prepared to perfection, whether as sashimi, grilled, or baked in sea salt, ensuring the natural flavours shine through in every dish.
Signature dishes include the Milos Special – a tower of lightly fried zucchini and eggplant layered with tzatziki dip, surrounded by pieces of Saganaki Kefalograviera cheese.
The Tomato Salad features vine-ripe beefsteak tomatoes, cucumber, green peppers, red onions, and Kalamata olives, all tossed in extra virgin olive oil and sea salt, served with barrel-aged feta cheese.
Another highlight is the tender, grilled Mediterranean Octopus (Xtapodi) from Limnos island, served with Santorini fava.
For a truly indulgent experience, the Astakomakaronada – lobster pasta Athenian-style – features steamed lobster and linguine pasta covered in a rich lobster bisque and authentic tomato sauce. The whole fish baked in sea salt is presented tableside, with a delicate process of breaking the salt casing, filleting, and plating, offering a visual and culinary feast.
Milos also offers an exceptional beverage programme, inspired by the flavours of Greece. Signature cocktails include the Martini of the Gods, a sophisticated rendition of the dirty martini using Greek vodka, umami bitters, and olive brine. The Demeter Sour is a unique take on the classic whisky sour, combining bourbon, pistachio syrup, Greek yoghurt, and fresh lemon juice. The Santorini Sunrise blends grapefruit gin, Campari, freshly-squeezed grapefruit juice, Kythira honey, and mint leaves, capturing the essence of the Greek islands.
Milos is home to the widest variety of Greek wines in Singapore, with labels sourced from indigenous grape varieties such as Assyrtiko, Xinomavro, and Agiorgitiko. These wines hail from regions like the volcanic terroir of Santorini and the mountainous slopes of the Peloponnese.
Designed by Alain Carle Architecte, Milos at Marina Bay Sands embodies the simplicity of Greek architecture. The restaurant features a monumental marble entrance made from Pendelikon marble, originating from Athens and dating back to the Parthenon. The cylindrical portico evokes the iconic windmills of the Cycladic islands, welcoming guests into a world of dining excellence.
The interior design highlights the breeziness and exteriority characteristic of Greek island architecture, with a Kalami ceiling evoking the feeling of dining under a giant pergola on a coastal terrace. The open kitchen celebrates the art of cooking, allowing guests to observe the culinary team at work. European oak wood, large urns, and artefacts from Greece, including pieces from Thessaloniki and Crete, enhance the restaurant’s aesthetic, creating a dialogue with the purity of the white space.
Located at B1-48 of The Shoppes at Marina Bay Sands, directly opposite Sands Theatre, Milos Singapore is a 155-seater restaurant open for lunch and dinner daily. The opening hours are as follows:
