Available from 8 January to 8 February 2020, the eye-catching and aesthetically pleasing celebratory dishes are thoughtfully curated and bound to delight children and adults alike. Skilfully prepared, every dish is true to tradition with a modern flair.
Toss to a year of good fortune and luck with the Prosperity Lo Hei with Smoked Salmon and Yuzu, the perfect yusheng to welcome the Year of the Rat. Featuring a delightful assortment of toppings such as crispy salmon fish skin and mouth-popping caviars of passionfruit and strawberry with pomegranate seeds, the textural contrast brings out the fun in this cartoon-inspired yusheng. Topped with smoked salmon and a homemade sauce comprising of plum, apple, pineapple and yuzu, this yusheng is refreshing and fruity.
A testament to culinary mastery, the Divine Aubergine Lantern features expertly sliced aubergine stuffed with minced pork and prawns, moulded into a unique lantern shape befitting for Chinese New Year. The lantern-shaped aubergines are shallow fried and served with a thick braising sauce made from the natural colouring of red rice.
Another picture-worthy mention for avid social media users is the pineapple-shaped Auspicious Prawn Ball with Black Truffle Mushroom. A combination of minced prawns, diced carrots and onions is stuffed with aromatic black truffle mushrooms, then coated with soft cubed bread and fried to perfection. This crispy goodness is best eaten with the flavourful black truffle and mushroom sauce served on the side.
Featuring fresh tiger prawns delicately coated with piquant garlic spicy sauce, the Glutinous Rice Wrapped in Lotus Leaf with Fresh Prawns and Garlic Spicy Sauce is not to be missed. The sliced fish, superior stock and ginger lend the glutinous rice depth and intensifies its flavours.
Served with Golden Pumpkin Sauce alongside Fa Cai (black moss), the Abundance Money Bag Stuffed with Dried Oyster topped with gold flakes and crunchy tobiko (flying fish roe) is an auspicious favourite.
