This Dragon Boat Festival, delight in the time-honoured tradition of enjoying rice dumplings with your loved ones. From 25 May to 14 June 2021, Chinese Executive Chef Leong Chee Yeng from Jade at The Fullerton Hotel Singapore presents the Jade Glutinous Rice Dumplings collection. This year, the assortment of rice dumpling flavours has been carefully crafted to please diverse palettes and preferences – from traditional classics to healthier options and locally inspired new creations.
Starring in this year’s line-up is the newly launched Ginseng Chicken Glutinous Rice Dumpling (人参鸡枕头粽, S$18 nett), consisting of tender marinated chicken thigh, Chinese ham, black mushroom and salted egg yolk. Nourishing and rich in flavour, the dumpling delivers the hearty and warming notes of traditional ginseng chicken soup.
Inspired by our local heritage, the Bak Kut Teh Flavour Pork Glutinous Rice Dumpling (情怀玉粽, S$12 nett) is another new addition and a variation of Jade’s signature Bak Kut Teh Xiao Long Bao. Chef Leong’s special blend of herbs, spices and garlic imparts fragrant herbal and peppery notes, distilling the distinctive flavours of the comforting local dish into compact rice dumpling form. The natural green dye extracted from spring onions lends an attractive jade-green hue to the peak of the dumpling, which is filled with marinated pork belly, salted egg yolk, black mushroom, and red beans for a touch of vibrant colour and texture.
For traditionalists at heart, Jade’s Five-Spice Pork Glutinous Rice Dumpling (玉楼咸肉炒米粽, S$12 nett) is a well-loved signature and classic staple of this festive occasion. Glutinous rice is first stir-fried with five-spice powder and black soy sauce for fragrance and flavour, then generously filled with marinated pork belly, fresh pork fat, salted egg yolk, black mushroom, black-eyed pea and chestnut.
Those seeking a healthier yet no less delicious experience would enjoy the Organic Millet Five-Grain OmniMeat Glutinous Rice Dumpling (香菇素肉五谷粽, S$12 nett). This unique creation features a wholesome blend of five-spice-scented glutinous rice, organic millet, oats, barley and brown rice, filled with a savoury assortment of pan-fried mushrooms such as king oyster, fresh shiitake, shimeji, lotus seeds, as well as OmniMeat, which consists of plant-based protein from pea, non-GMO soy, shiitake mushroom and rice.
The premium Traditional Hong Kong-Style Abalone Treasure Glutinous Rice Dumpling (传统港式 鲍鱼裹蒸粽, S$38 nett) is perfect for sharing with a generous bounty of luxurious ingredients including two pieces of Ten-head abalone, dried scallop, roast duck, roast pork belly, salted egg yolk, black mushroom, mung bean, lotus seed, and chestnut encased in glutinous rice.
Send warm greetings to those you treasure with the Golden Treasures Glutinous Rice Dumplings Hamper (黄金聚宝糯米粽臻礼篮, S$88 nett), comprising an assortment of seven dumplings in a basket: two Bak Kut Teh Flavour Pork Glutinous Rice Dumplings, two of Jade’s Five-Spice Pork Glutinous Rice Dumplings, two Organic Millet Five-Grain OmniMeat Glutinous Rice Dumplings, and one Ginseng Chicken Glutinous Rice Dumpling.
