This Spring, Li Bai Cantonese Restaurant’s Executive Chinese Chef Chung Yiu Ming will join forces with Japanese Chef Akihiro Maetomo of Maetomo Japanese cuisine Kaiseki & Sushi, in a special four-hands collaboration to present a series of fusion creations to astound discerning palates. The culinary collaboration sees both combine their passion and creativity to unleash an unforgettable epicurean experience. Available exclusively from 31 March to 1 May 2022 on Thursdays, Fridays and Saturdays, guests can indulge in an exquisitely curated 8-course dinner at Li Bai Cantonese Restaurant.
Hailing from Japan, Chef Akihiro Maetomo helms Maetomo Japanese cuisine Kaiseki & Sushi since 2019. His previous stints were at prestigious restaurants in Osaka where he earned Michelin stars, before moving to Singapore in 2010. In 2012, Chef Maetomo was appointed VIP’s head chef at Singapore’s F1 Grand Prix, and is also recognised by the Ministry of Agriculture of Japan as a goodwill ambassador of the cuisine. With more than a decade worth of experience, Chef Maetomo will pay homage to his roots by curating refined dishes using the finest seasonal ingredients.
An advocate of showcasing the intrinsic flavours of the ingredients, Li Bai’s Executive Chinese Chef Chung Yiu Ming brings with him over 30 years of experience as a chef of Cantonese cuisine in Hong Kong, China and Singapore. With his immaculate culinary dedication, Chef Chung will be whipping up a gastronomic storm that is perennial to the traditions.
With the culmination of culinary expertise and fresh quality produce from both, one can expect palatable dishes the likes of bonito dashi soup with grouper, fish maw and seasonal vegetables; Alaskan king crab, Hokkaido scallop and okra wrapped in egg white crepe with Hokkaido sea urchin and salmon roe; coffee-glazed A5 Kagoshima wagyu with junsai vinegar; 4-hour simmered Japanese abalone with charcoal beancurd, eggplant and abalone liver sauce; claypot Koshihikari rice with Hong Kong dried shrimp, waxed meat, mixed mushroom, dark miso soup and pickles, and more.
The four-hands collaboration will be held at Li Bai Cantonese Restaurant between 31 March and 1 May 2022, from Thursdays to Saturdays. Eight-course dinner set menu is priced at $308++ per person, with an additional $68++ per person for alcohol pairing.
