Propeller, Singapore’s latest rooftop bar in the Harbourfront district has opened at Bay Hotel Singapore. This marks the launch of the hotel’s signature bar brand across all current and future Bay Hotel properties. Overlooking the Keppel Harbour and Sentosa, Propeller makes for a breezy chill-out spot with friends and colleagues or for entertaining clients. On selected evenings, one can also enjoy the fireworks erupting from across the Sentosa Broadwalk as you lounge on cushy sofas on the hotel rooftop.

Besides the amazing panoramic views, Propeller’s main draw is its specialty cocktails, the creations of Bar Manager Farhhad previously from Lantern and House @ Dempsey.  The signature Propeller Bay ($19), likely a lady’s favourite, is made using 42 Below vodka mixed with orange juice, raspberry syrup and thyme. It is then topped with a layer of homemade lime espuma, which can be torched into lime meringue for that extra bite.

Be sure to have a Mozartz ($19), also a signature drink – a concoction of chocolate liquor, Campari, Campano Antica Vermouth, orange foam and house-made Campari dust – if you enjoy a sweet drink that comes with a bittersweet aftertaste.

And don’t forget your Date with Hendrix ($14.90). As the name suggests, this cocktail is a result of Hendricks gin mixed with crushed dates and topped with fresh lime juice and triple sec syrup, then garnished with a date for good measure. Besides these creations, a selection of classic cocktails is available too.

All drink garnishes are made in-house using our own dehydration machine and selected drinks come with herbs from the hotel’s mini edible garden.

After satiating your thirst, a tapas menu is available to curb all your hunger pangs as well. The menu features items like Pan-seared Scallops with Citrus Fennel Salad ($9.50), Crabmeat Creole ($8.90), Smoked Duck on Crisp Potato Skin ($7.50), Seared Beef Cubes with Truffle Mayonnaise ($9.90) and Brandy Flambe Escargots with Garlic Butter ($13.50). 

For those who love a good Cheese Platter ($14) to go with your wines, you will not be disappointed with Propeller’s wine cellar. The house selection alone carries three house red and three house white wines ($11-$12.50) sourced from specially chosen vineyards.

Nothing beats a casual evening unwinding after a busy work day filled with happy hour deals, great food and good music, and that is exactly what Propeller has been designed to deliver.

With this successful launch of Propeller in Singapore, the second Propeller is already in the works at Bay Hotel Singapore’s sister property Bay Hotel Ho Chi Minh. It is slated to open later this year.
