Chinese New Year is one of Singapore’s most anticipated cultural celebrations and a remarkable season of gatherings over auspicious dishes and unbridled feastings, heralding the strengthening of relationships and good fortune. At Sofitel Singapore City Centre, its signature restaurant Racines CNY Feasts will see it showcase its inaugural festive set menus. Master Chef Andrew Chong who heads the Chinese culinary brigade of the hotel and Racines crafted an exquisite collection of prosperity enhancing menus and much celebrated seasonal dishes that will surely usher in a bountiful and auspicious Year of the Dog for one and all.
You can toss to an auspicious start with a selection of traditional Yu Sheng options that include Sofitel’s Signature “Eight Treasures Yu Sheng” at $188++ comprising 8 mouth-watering ingredients that include Baby Abalone, Fried Fish Skin, Crispy Silver Fish, Lobster Roulade, Homemade Cured Salmon, Hamachi, Jellyfish and Ikura; Two other Yu Sheng options are available including Sofitel’s Abalone Yu Sheng with Condiments at $168++ and the Traditional Homemade Cured Salmon Yu Sheng with Condiments at $128++ per order. Each Yu Sheng is available both for dine in and take away at Racines and as part of Sofitel’s CNY and Reunion Menu offerings with three (3) choices of dressing – Yuzu, Thai Style or Traditional.
Chef Andrew Chong’s collection of Lunar New Year delights include his signature Seafood Abalone Treasure Pot with Braised Cabbage and Black Moss (Pen Cai); Steamed Fragrant Rice with Chef’s Selection of Waxed Meats and Bok Choy; Tamari Glazed Baked Black Cod Fillet, Edamame, Seasonal Greens; Double-Boiled “Ang Xin” Chicken with Fish Maw, Conpoy and Morels as well as the Slow Cooked French Corn-fed Chicken with Scallion Relish, Oyster Sauce.
At 1864, Head Mixologist Michael Mendoza meanwhile concocted “Red Blossom” in celebration of the season. This unique Chinese New Year inspired hot cocktail comprises traditional ingredients such as Wolfberries, Red Dates, Chinese and American Ginseng, Jasmine Monkey Tea, Honey and Gin. Available at 1864 from 1 February 2018 at $14++
