The culinary experience at the Skyline Lunch is nothing short of exceptional. This five-course Cantonese-style set menu is meticulously crafted by the culinary team from Sky View Pavilion, an award-winning restaurant renowned for its exquisite Cantonese cuisine.
The meal begins with a specially curated Dim Sum Trio Platter featuring Chicken Dumpling “Siew Mai” with abalone sauce and tuna flakes, a cheesy lychee prawn ball, and a barbecued chicken puff pastry. Each dish is crafted with precision and care, ensuring a delightful start to our meal.
Next, we enjoyed a double-boiled chicken soup, rich with the earthy flavours of morel mushrooms, dried conch, and bamboo fungus. This comforting soup sets the stage for the main courses, which are the true highlights of the dining experience.
The osmanthus-smoked cod, paired with pumpkin puree, tomatoes, and broccoli, is a standout dish that combines delicate flavours with a touch of elegance.
This is followed by a mini lotus leaf rice with 10-head South African abalone, prawns, dried scallops, and shiitake mushrooms—a delectable combination that will satisfy any gourmet palate.
To complete the meal, we indulged in a refreshing lemongrass jelly with assorted fruits, perfectly complemented by Chinese tea. This dessert provides a light and satisfying end to a remarkable culinary journey.
The exceptional service provided by our host, particularly Rahman, elevates the entire experience. His attentiveness and warm hospitality ensure that every detail is perfect, making our lunch not just enjoyable but truly memorable.
