2019 will be the Year Of The Pig. Culinary-wise, it is not a tough ingredient to use for the Chinese but if you are seeking something more unique for your loved ones this Lunar New Year, you must check out our list of unique pork dishes to usher in the fresh start!
1. Unique Pork Dishes – Antoinette
The Parisian-inspired patisserie showcases French pastry making techniques and Singaporean influences in its latest festive offerings. One of these is the Hong Bao 红包 ($10(S); $25(L), a bun made using a unique combination of French poolish and Japanese water roux bread techniques. The bread is infused with red dragon fruit juice and filled with fluffy pork floss in addition to house-made nian gao perfumed with fried shallots, salted egg, candied yam.
Dig into the Prosperity duo of deep-fried pork knuckle and slow-baked honey butter ribs, available for takeaway at Min Jiang (Goodwood Park Hotel) and good for six people.
There are also claypot options for dine-in and takeaway: with slow-braised pig’s trotter with abalone and sea treasures from Min Jiang (Goodwood Park Hotel) or braised pork belly with pan-fried lotus root pork patties and sea treasures from Min Jiang (One-North).
On the menu for LNY at LeVeL33, the world’s highest urban microbrewery, is the Pork Platter, a gastronomic presentation of a pig from head to toe. The bountiful platter is good for two, featuring croquettes made with shredded braised pork cheeks, Iberico pork glazed with a char siew sauce made with house-brewed IPA as well as mini pork rotisseries with pork crackling, lager pickled cucumber & salad.
At Cantonese restaurant Yàn, there are the restaurant’s signature offerings for LNY such as the Signature Roast Crispy Suckling Pig which has an auspicious shade of red.
The Harvest Pen Cai, Yàn’s take on the traditional claypot dish, features pig trotter, roast pork, and dried pig skin. There’s also braised gourmet delicacies such as sea cucumber, prawns, and whole conpoy.
Contemporary Italian restaurant Zafferano is bringing back its Italian Table Saturday Champagne Brunch the weekend before Lunar New Year. There are a series of Lunar New Year-inspired dishes, and the highlight is at the carving station, featuring porchetta or roasted pork done Italian style with roasted potatoes.
