To mark the nation’s 57th birthday, Yàn pays homage to Singapore’s culinary heritage with a Yan National Day 2022 Dim Sum Menu (from $6++). Available for lunch only from 6 to 31 August 2022, indulge in a special selection of delicate creations showcasing a sumptuous spread of classic Cantonese delights incorporated with local flavours.
The distinctive aroma of wok hei can be enjoyed in the Wok Fried Nyonya-Style Carrot Cake ($14++) – cubes of carrot cake, carrots, preserved sausages, and shrimps are wok- fried with Yàn’s savoury house-made Peranakan-style chilli sauce made with spices such as candlenuts, galangal, and lemongrass. Another dish that celebrates the Peranakan culture is the enticing Steamed Assam Cod Fish and Prawn Dumpling ($9++ for 3 pieces). Succulent black cod fish, prawn, celery and carrot are marinated with a piquant assam sauce, then wrapped within beetroot juice-infused crystal dumpling skin. The handmade dumpling is topped with a slice of cod fish before it is steamed.
Braised Pork Belly in Steamed Bun ($6++ for 2 pieces) highlights fork tender braised pork belly that is simmered in an aromatic braising liquid of Japanese soy sauce, cardamom, garlic, and onions for 16 hours. Fluffy steamed buns are stuffed with flavourful pork belly and lettuce, with mustard sauce served on the side. Drawing inspiration from the famed pork rib soup in Singapore, the Steamed Xiao Long Bao with Bak Kut Teh Stock ($8++ for 4 pieces) features handcrafted dumpling parcels encasing minced pork and herbal pork bone broth.
A popular mainstay at Yàn, the Steamed Hainanese Chicken with Sticky Rice wrapped in Lotus Leaf ($6++ for 2 pieces) presents a Cantonese interpretation of the beloved Hainanese chicken rice. Cocooned in a lotus leaf parcel are morsels of chicken thigh nestled in glutinous rice and steamed with lemongrass, garlic, and ginger. It is served with classic chicken rice condiments such as chilli sauce, dark soya sauce, and ginger sauce.
Appetising snacks include Pan-fried Singapore Chilli Crab Meat Bun ($9++ for 3 pieces) and Deep-fried Chicken Satay Spring Roll ($9++ for 3 pieces). The former is a perfect union of Singaporean’s favourite crustacean delicacy with deep-fried man tou while the latter pays tribute to the chargrilled skewered meats in Singapore’s hawker scene.
